Christmas Tree Croquembouche Demo at ICC

Last week Jacques performed a live demonstration for the students at the International Culinary Center in New York on how to create a Christmas Tree Croquembouche. This is a French dessert consisting of choux pastry balls filled with cream, piled into a cone, and bound together with threads of caramel and toffee.
